Dashi's ownership first met Satoshi in 2014 at his izakaya in Tokyo, Hiro. There, Satoshi crafts dishes with the freshest ingredients and centered around a bounty of Japanese seafood. Since that first visit, Satoshi has joined Billy for omakase dinners at Dashi in 2016, 2017, and 2018. Dashi's team has also worked in the kitchen at Hiro during their 2017 trip to Tokyo!
In an izakaya, (Japanese pub), ordering omakase entrusts your order to the chef – it is essentially a chef’s tasting menu. Dining omakase is a way for Dashi to showcase the chefs’ finest ingredients and techniques! This dinner is hosted in our upstairs izakaya and is offered by reservation only.
Dashi is a Japanese ramen shop and izakaya in Downtown Durham, North Carolina. Centering on exquisite ramen bowls, the menu also features innovative small plates and an extensive Japanese whisky, sake and shochu list.
For the fourth year in a row, Durham foodies will able to enjoy an extravagant, yet reasonably priced, meal co-created by the Tokyo-based chef and Cotter. Don’t miss this special series at Dashi! A vegetarian menu will be prepared in addition to the original menu.
